Do you like slaving over a hot stove in summer?

Nah, me either.

Truth is, I don't like toiling over a stove no matter what the season,
and it's no secret that I'd rather do anything but cook.

So, when I saw this recipe in the NY Times
many years ago...

It got my attention because...
the only cooking involved is boiling the pasta.

Boil, chop, chop, grate...and, finito!

I haven't made this in a long time,
because I've been watching my weight, 
and I don't have an "off" switch when it comes to pasta.

But when the family starts groaning...
"Chicken again?.."
it's time to switch things up. 

I'd forgotten how good it is. 
 
Never mind that I made way too much...
let's just say that I could have fed all of you
had you stopped by.

This pasta salad is a great dish to make for a picnic... 
or as a side dish for a barbecue.

It's also a super-easy, super-fast dish for supper.
Serve it with a crusty bread,
and some delicious gazpacho,
and you've got yourself 
a cool meal for a hot summer day.

Arugula Tomato Pasta Salad


1/2 pound farfalle, cooked, drained and rinsed
3 cups stemmed and torn arugula
1/2 cup chopped fresh basil
2 large tomatoes, cut into 1/2" pieces
1 teaspoon grated lemon rind
3 tablespoons olive oil
1 tablespoon fresh lemon juice
2 teaspoons salt
Freshly ground pepper to taste

Put the farfalle in a large bowl.
Add the arugula and tomato.
Mix together the basil, lemon rind, olive oil, lemon juice and salt; pour over pasta.
Toss to coat.
Add fresh pepper to taste.

    1. If you make a full pound, it feeds a ton of people. I used baby arugula, and it stayed fresh looking for a couple days, and it is very transportable.

  10. Oh, Amy, your Pasta Salad with Arugula and Tomato is the perfect meal for the horrible heatwave we're having today! What a lovely blend of veggies and basil and lemon juice and tomatoes! Just wondering...would it be wrong to add a sprinkle of Parmesan cheese to this already amazing dish? If you think it is, I won't - (tell you, that is!;)).

    1. I hope your heatwave has subsided, Poppy, but if not, make some of this pasta salad so you don't have to cook! It would be completely right to add the cheese; in fact, I did, but I took all the photos before I did that -- oops!
