Roasted Pear Salad With White Balsamic Vinaigrette: An Oldie But Goodie...and the Moon!



What do you like better -- apples or pears?

I love crisp apples, but when pears are at that perfect state of ripeness,
man, they are hard to beat.
The only thing better than a perfectly ripe pear is a perfectly ripe roasted pear. 
And the only thing better than that is a perfectly ripe roasted pear in a salad.
YUM!  

I'm bringing back an oldie but goodie fall recipe from my early days of blogging,
which was many moons ago, so chances are, you haven't seen it.
The pictures aren't great, but the recipe is.

It takes a little time to prepare, because you have to roast the pears,
so I make it only once in a "blood" moon.

How's that for a segue?

Were you able to see the blood moon?
It was spectacular!
We got so lucky -- the sky was clear until the the moon was totally eclipsed,
and then, the clouds rolled in.

Not bad, eh?

  4. I love pears, and like you said, roasted pears are even better. One of my favorites salads is roasted pears, cranberries, almonds and blue cheese.

    I took pics of the moon but they didn't come out good. The longest lens I have goes to 300, which doesn't quite cut it. What lens did you use.

    1. Hi Doreen, I shot it with a 200mm lens. I had my tripod out on the front lawn, and kept the camera setting on P, adjusting the light meter a little until I got it right. I actually couldn't believe how good they came out!

  5. This recipe sounds amazing Amy! You got some fabulous moon shots. We had a heavy cloud cover but saw the beginning and then the end of the eclipse - sigh! I think I'll have to add some pears to my grocery list!

    Roasted pears? Yum! I make a Fall salad with pears, pumpkin seeds and crumbled cheddar cheese BUT I've never thought to roast the pears, going to try your recipe.
    Your photos of the "Blood Moon" are spectular. John and I were dissappointed because in the city it was not visuable because of cloud cover,

  12. It was too cloudy here for the blood moon but I can make a roasted pear salad! I think the key is getting the pears at that perfect state of ripeness...something I fail to do a lot even though I love them!

  15. A perfect fall salad, Amy. I've used pears with mixed greens, gorgonzola, walnuts and pears. It's one of my favorites. May have to try roasted pears next time. Enjoy the rest of your week.

  16. That salad looks delicious. I can sure go for one right now. I love pears in my salad too. I usually cook them for a few minutes with a bit of honey and light brown sugar before I add them to my salad. I then use blue cheese, cranberries, and whatever else I have on hand to finish it off.

    It was very cloudy by us so we did not have a clear view of the blood moon. Your pictures are spectacular.
