I swear, I even rush to get into bed at night.
Somehow, I thought that once I left my job,
I'd be doing everything at a leisurely pace.

I apologize for not blog-hopping much this last week,
but "life" has been going on, and sometimes I think
that even if I didn't sleep at all...
there still wouldn't be enough time to do everything I want to do.
Note the key word: Want.

I've been so busy all week,
that I didn't get to make my Passover recipe until yesterday.
I had a fabulous idea, but when I googled it,
I couldn't find anything like it.
I could barely curb my enthusiasm
that no one else had thought of it...
...which meant I had to figure out how to make it on my own.
Uh, well, I'm not the best at that, and here's proof:
Epic Fail.

I'm not going to tell you what it is,
because I think it is SUCH a great idea...

The blueberry muffins were my fall-back recipe,
(Any Larry David fans in the house?)
Every Passover, the one thing that stumps me
is what to eat for breakfast.
This wasn't always the case...
when I was a kid, nothing could better
than some matzoh shmeared with butter.
Now? Eight days of matzoh for breakfast?
I need a little more variety,
and these muffins are the answer.
I can't remember where I got the recipe,
so if it's yours, let me know and I'll give you a shout-out.
These can be whipped up in about five minutes,
and they take 15-20 minutes to bake,
depending on your oven.

Passover Blueberry Muffins
1 cup superfine sugar
1/2 cup vegetable oil
3 eggs
1/2 cup matzoh meal
2 tbsp potato starch
1 tsp cinnamon
1 3/4 cups blueberries
Preheat oven to 350F.
Line muffin tins with paper baking cups.
In a medium bowl, beat the sugar, oil, and eggs with an electric mixer for 2 - 3 minutes. Set aside.
In a small bowl, sift together the matzoh meal, potato starch and cinnamon.
Add the dry ingredients to the egg mixture.
Stir in the blueberries.
Stir in the blueberries.
Spoon mixture into muffin cups.
Sprinkle tops with cinnamon and sugar.

Bake for 20 minutes. While still hot, sprinkle again with cinnamon and sugar.
Cool for five minutes. Then remove the muffins and cool on a rack.

Store in an airtight container for up to 3 days or freeze for up to 3 months.
Makes 1 dozen.

Well they look gorgeous to me (so much so, I am going to have to raid the treat cupboard now!). I have been collecting the April photos and having so much fun with them. DeleteYum! Do you have a good matzoh ball soup recipe? My uncle used to own a Jewish deli...oh so good!! Potato knishes, potato pancakes, matzoh ball soup...I was a happy camper while I was working for him back in college!

I haven't been baking (trying to drop a few pounds - not working!) and I finally broke down and bought a package of oatmeal cookies just to have something sweet in the house. Our family will be celebrating Easter so maybe, just maybe, I'll create some dreamy eyed dessert to share on my blog ?? Enjoy your celebration too!

I am intrigued by your muffins recipe, Amy. I have never cooked or baked with matzoh, but I am always looking to try new things!
Baking with matzoh is definitely a different consistency, but these taste close to regular muffins. Passover recipes are not always the best, but they have come a long way and are much better than when I was a kid!
