Blueberry Muffins for Passover

Are you always rushing around?

I'm playing beat the clock to get this post finished. 
Such PRESSURE!!! 

I swear, I even rush to get into bed at night. 

Somehow, I thought that once I left my job, 
I'd be doing everything at a leisurely pace.

Oh, not so, my friends. In fact, I think it's worse than ever. 

I apologize for not blog-hopping much this last week,
but "life" has been going on, and sometimes I think 
that even if I didn't sleep at all...
there still wouldn't be enough time to do everything I want to do. 
Note the key word: Want
My "Want To Do" list and my "Need To Do" list 
are two very different things.

I've been so busy all week, 
that I didn't get to make my Passover recipe until yesterday.  
I had a fabulous idea, but when I googled it,
I couldn't find anything like it. 

I could barely curb my enthusiasm 

that no one else had thought of it...

...which meant I had to figure out how to make it on my own. 

Uh, well, I'm not the best at that, and here's proof:

 Yuppers, that's my fab Passover dessert. 

  I dare you to pin it.

Mr. Goo Shoes dared me to eat it, and I did.
Can I tell you --  it tastes great! 

I'm not going to tell you what it is, 
because I think it is SUCH a great idea...
and I don't want anyone to beat me to it. 
It could be a Pinterest first!

And...now I have an entire year until next Passover to get it right :)

The blueberry muffins were my fall-back recipe, 
and they are PRET-TY PRET-TY good!
(Any Larry David fans in the house?)


Every Passover, the one thing that stumps me 
is what to eat for breakfast. 
This wasn't always the case...
when I was a kid, nothing could better
than some matzoh shmeared with butter.

Now? Eight days of matzoh for breakfast?
Thanks, but no.
And there's only so much matzoh brei one can eat. 
I need a little more variety, 
and these muffins are the answer.

I can't remember where I got the recipe,
so if it's yours, let me know and I'll give you a shout-out. 

Passover Blueberry Muffins  --- Ms. Toody Goo Shoes

These can be whipped up in about five minutes,
and they take 15-20 minutes to bake, 
depending on your oven.

Passover Blueberry Muffins
1 cup superfine sugar
1/2 cup vegetable oil
3 eggs
1/2 cup matzoh meal
2 tbsp potato starch
1 tsp cinnamon
1 3/4 cups blueberries

Preheat oven to 350F. 
Line muffin tins with paper baking cups.

In a medium bowl, beat the sugar, oil, and eggs with an electric mixer for 2 - 3 minutes. Set aside. 

In a small bowl, sift together the matzoh meal, potato starch and cinnamon.  

Add the dry ingredients to the egg mixture.

Stir in the blueberries.

Spoon mixture into muffin cups.

Sprinkle tops with cinnamon and sugar.

Bake for 20 minutes.  While still hot, sprinkle again with cinnamon and sugar. 

Cool for five minutes. Then remove the muffins and cool on a rack. 

Store in an airtight container for up to 3 days or freeze for up to 3 months.

Makes 1 dozen.

The problem is, you can't eat just one.
Or at least, I can't.

  1. Well they look gorgeous to me (so much so, I am going to have to raid the treat cupboard now!). I have been collecting the April photos and having so much fun with them.     1. When I read your comment, I realized I forgot to say to sprinkle cinnamon and sugar on top -- oops! See, I was rushing! I've fixed it though, so thank you for saying "cinnamon!"

  5. I know what you mean about a busy week past!!! Too bad we have to sleep once in awhile. Your blueberry passover muffins look perfect and your "flop" looks delicious too. Can't wait to hear what that was supposed to be. Have a great week ahead, take deep breaths, enjoy your family R & R!

  6. Yum! Do you have a good matzoh ball soup recipe? My uncle used to own a Jewish deli...oh so good!! Potato knishes, potato pancakes, matzoh ball soup...I was a happy camper while I was working for him back in college!

    1. I would have gained 30 pounds working at that deli! I haven't made matzoh ball soup -- I leave that to my sister. I'll have to get her to make it so I can post it!

  8. Those blueberry muffins look fantastic. I probably won't make them though as I don't have some of the ingredients. I'll just wait until you make us a batch to taste one.

  10. Those muffins look quite inviting Amy! I haven't been baking (trying to drop a few pounds - not working!) and I finally broke down and bought a package of oatmeal cookies just to have something sweet in the house. Our family will be celebrating Easter so maybe, just maybe, I'll create some dreamy eyed dessert to share on my blog ?? Enjoy your celebration too!

    After my two cups of morning coffee I feel so ready to get it all done, until the caffeine is out of my system, and I get a better grip on reality:)

    I am intrigued by your muffins recipe, Amy. I have never cooked or baked with matzoh, but I am always looking to try new things!

    1. Baking with matzoh is definitely a different consistency, but these taste close to regular muffins. Passover recipes are not always the best, but they have come a long way and are much better than when I was a kid!
