What's the one thing that shows up on your dinner menu  
more often than others?

If you come to my house for a regular weeknight dinner, more than likely, 
I'll be serving you chicken.

Baked chicken
Roasted chicken
Sauteed chicken 
Stir-fried chicken
Barbequed chicken
Slow-cooked chicken
Boiled chicken
Broiled chicken

I must have a different chicken recipe for every day of the year.
That would make this the one for March 10th :)

Truth be told, it's not my recipe. 
My sister, Aunt Goo Shoes, created it about a year ago.
In fact, I've never made it, but it's so easy, 
 even I could make this.
 I took a picture of her post on Facebook back then - 
it's a little messy since I had to cut out all the names, 
but you can see the rave review I gave it almost a year ago.

 If you're a regular follower of mine, 
then you know that I'd rather do anything, but cook.
My sister, on the other hand, loves it.
 The cooking and baking genes 
got split right down the middle between two sisters. 

Aunt Goo Shoes is nice enough to come and cook for us on many Sunday nights.
My family looks forward to it because it's the one night a week 
they know they'll get a good meal.
With me, it's always a crap shoot...
case in point...remember my Pad Thai Noodles?

Much our gastronomical dismay, she doesn't come every week, 
and when she doesn't, we're not above 
making her feel REALLY guilty about it.

"But we'll starve!"

In fact, you may remember this picture that I texted her 
saying that because she didn't come, we had nothing to eat, 
but a Baby Bonbel cheese and some hot sauce for dinner.


 There is one little downside to Aunt Goo Shoes cooking at our house,
which is that I'm on clean up and "put-away" duty.
I know that's only fair, and trust me, I'd rather wash dishes
any day than cook a meal, 
but Aunt Goo Shoes has been known to use every pot in my house, 
and the neighbors', too!

 Before I scare you off, I want you to know that this chicken dish 
uses only one pot...
and that is NOT the reason why it's one of my favorites!
We love it because it is Super Tasty.
Ginger, scallions, soy sauce, wine, garlic...
What's not to like?

Aunt Goo Shoes recommends free-range chicken;
she also prefers to slice the raw chicken in half through the middle 
to make two thinly sliced chicken breasts,
rather than buy it already thinly sliced.
You know me, I wouldn't bother, but then again, 
that's why I'm not the cook, and she is.

Ginger Soy Chicken with Mushrooms
Recipe by Aunt Goo Shoes 

2 pounds boneless chicken breasts (thinly sliced)* See note below
1 pound white button mushrooms, sliced and chopped
Plain panko crumbs, enough to coat chicken
2 egg whites plus one egg, beaten
8 cloves garlic, chopped
1/2 cup low-sodium soy sauce
2 cups white wine (preferably one you like to drink)
1 cup chopped scallions
1 tbsp fresh ginger, grated
Freshly ground pepper, to taste 
Olive oil 

*If you are using regular boneless chicken breasts, slice them through the middle to make two thinly sliced breasts. If you are using thin-sliced chicken breasts, skip this step.

In a large saute pan, saute mushrooms in olive oil over medium-high heat, and set aside.

Dip chicken in egg mixture, coat chicken with panko crumbs. Set aside.

Add more olive oil to saute pan, and heat. Add garlic, and saute until translucent. 

Place chicken in pan and saute over medium-high heat until golden on both sides.

Remove chicken and set aside.

Remove pan from heat, and discard browned garlic.

In a mixing bowl, combine soy sauce, ginger and pepper. Use a whisk to blend.

Slowly add soy sauce mixture to pan. Using a rubber spatula, loosen browned bits from bottom of pan. 

Return to heat, and add 2 cups of wine. Turn heat to medium-high to burn off alcohol. Continue stirring for about 10 minutes. 

Return chicken to pan with the liquid, and add mushrooms and scallions. Reduce flame to simmer. Cover, and heat about ten minutes, until scallions soften, but are still bright green. 

Remove chicken to platter. Spoon mushroom and scallions, and any remaining sauce over chicken, and serve.

  5. That looks sooooo good! My husband is a better cook than me, so I often pass good recipes over to him to see if he wants to give it a whirl. I can cook (using a recipe) but my husband knows how to come up with his own. You're lucky to have a sister that is showing you the ropes too. I will save this recipe.
