It seems that everywhere I go on the internet, I'm running into avocado toast.
I'm a little bent out of shape, because this food craze,
which has clearly replaced the kale smoothie as the "it" food,
is something I invented years ago.
That's right, I did.

When I used to bring my lunch to work,
I'd always take some whole wheat bread, an avocado,
and whatever leftovers I had in the fridge.
I'd mash the avocado, schmear it on the bread, and top it with the leftovers.
That's exactly what avocado toast is...

there was no way for me to announce my creation.

And so, I will not go down in history as the inventor of avocado toast.
Too bad.
But I know I was.
And that's all that matters.
There's really no recipe here, and it's hard to screw up.

It pretty much works with anything --
except possibly chocolate cake,
but since I haven't tried that, I can't really knock it.
Who knows, it could work.
Just in case you're having a hard time coming up with toppings,
let me give you a head start by showing you four ways

you can eat it for breakfast, lunch, dinner or snack.
Now that I'm home from vacation,
I've got to go back to eating healthy.
I did not deprive myself of a thing when I was away.

ReplyDeleteOne of my favorite breakfast is to toast good sourdough bread, add your smear of mashed avocado with lime and chopped jalapeƱo, next scrambled eggs with chives, then leftover grilled or smoked salmon. Delicious!
