You know how sometimes you want something, and you want it fast?
A couple of Sundays ago, I felt like baking something,
and I wanted it to be ready quickly.
I wasn't sure what to make,
until I started to pull something out of my cabinet,
and my donut pan literally fell out and hit me on the head.
Doinnnggggg!!!
Donuts suddenly seemed like a good idea.
The caveat was that I had to have all of the ingredients on hand,
because we were watching the NY Giants play the Buffalo Bills,
and I didn't feel like running out to the store.
That left out pumpkin.
And chocolate.
No lemon, either...
I did have cinnamon, though.
A quick huddle with Google turned up
Baked Cinnamon Donuts from Seasoned Cook on Food.com.
Yup, they looked easy enough to whip up during halftime.
Decision made.
I measured out all of the ingredients during commercials,
so that I could assemble the donuts while Big Blue was in the locker room.
The recipe calls for mace, but I substituted pumpkin pie spice.
It also says to sprinkle the cinnamon and brown sugar over the donuts,
and then to drizzle melted butter over that.
I mixed the butter into the cinnamon and sugar,
and then sprinkled it onto the donuts.
I just found it easier that way,
but it may have been a game changer in the appearance of the donuts,
resulting in more nooks and crannies.
With only one donut pan, I could only bake six at a time.
I got the first batch into the oven just as my play clock was running out,
and the third quarter was starting.
As I was about to settle down to resume watching the game,
I noticed the vanilla and the melted butter sitting on the counter.
Oh SNAP!!!!
I forgot to use them!
Another baking fumble.
Fortunately, I could still add them into the remaining batter of the second batch
(a replay, if you will).
Junior Goo Shoes was watching me from the sidelines,
asking when the donuts would be ready.
They baked quickly.
Before I knew it, the oven timer gave me a two-minute warning.
When they were finally ready, I gave JGS the signal.
He practically tackled me to get to kitchen,
and ate two donuts faster than Odell Beckham, Jr. can sprint into the end zone.
Hey, time out, JGS - don't eat them all at once!
Regardless of my false start, the donuts were ah-MAY-zing!
The first batch came out kind of flat, because of the missing ingredients,

Is it just me, or do these donuts remind anyone else of a Shar-Pei?

Baked Cinnamon Donuts
The donuts were winners, and thankfully, so were the Giants.
They beat the Bills 24-10.
And, this past Sunday's nail-biting victory against the 49ers was especially sweet,
as they are in a three-way tie for first place in the NFL east.
I better start thinking about Super Bowl food.
Go Giants!

Baked Cinnamon Donuts
Recipe by Seasoned Cook on Food.com
Yield: 12 donuts
2 cups flour
2 teaspoons baking powder
2 teaspoons cinnamon
1/2 teaspoon nutmeg
1/4 teaspoon mace (*I substituted pumpkin pie spice)
1/2 teaspoon salt
1 1/2 cups sugar
1 large egg, beaten
1 1/4 cups milk
2 tablespoons butter, melted
2 teaspoons vanilla
TOPPING
3/4 cup brown sugar
1 1/2 teaspoons cinnamon
1/4 cup butter, melted
Mix all seven dry ingredients in a medium-size bowl.
In a smaller bowl, beat egg.
Mix egg with milk and melted butter. Add vanilla.
Stir milk mixture into dry ingredients until just combined, being careful not to overmix.
Spoon into greased donut baking tin, filling approximately 3/4 full.
Mix cinnamon into brown sugar. Stir in melted butter, and sprinkle over donuts.
Bake at 350°for 15-17 minutes.
They beat the Bills 24-10.

Oh Amy, but I've done on cinnamon donuts taste :-) Outside, the cold, the wind blowing and a cinnamon cake would gladly proved. It reminds me of Sweden and rustic cinnamon products.

Okay, I do have everything in my pantry to make these, including the pan. Now to just get up earlier enough and remember to make the donuts!! They look delicious and yes, a little like that a Shar-Pei!

I haven't made doughnuts in years because I thought you had to drop them in the hot oil. Not that I'd be against that but it does make a mess, if I remember correctly. These sound wonderful, Amy!
