Maybe I'm just over-tired...Our weekend was spent chauffeuring Junior Goo Shoes from here to there, and there to here.
We took him to his camp reunion...a high school championship football
game...a party and a sleepover, covering lots of territory all over NJ and NY. Even our GPS was exhausted. I think I spent more time in the car than in my bed. But what little sleep I did get, I spent dreaming about S'mores Brownies...

Back in August, Vicki, from Life In My Empty Nest wrote a post featuring these S'mores Brownies she made for a tailgate party. You know when a recipe speaks to you? Well this one kept calling "Bake Me!" from my Pinterest board.
So, F., this post is for you :)
I first made the brownies back in September for a little gathering I had at my house. I didn't get to taste them until I served them, because I made them just before everyone arrived.
A proper hostess would leave it to the guests to do the complimenting, and then demurely thank them.
"Why, thank you, I'm so glad you like them!"
But not me.
My "Good Hostess" etiquette went right out the window.
"OMG, these are AMAZING!
I can't believe they are so GOOD!
They're FABULOUS!!!"
That was me. Raving about my own baking. Tacky, Tacky, Tacky.
I couldn't help it. They were that good.
Since that first batch, I've made these over and over again. They are SO easy, and hardly take more time than making brownies from a mix. I've made them several times for school bake sales. Needless to say the kids LOVE them. They are the first things to disappear off the table.
I stick to milk chocolate for the kids...which is way too sweet for me.
I prefer dark chocolate.
For the brownie mix and graham crackers, I look for brands that don't have any partially hydrogenated stuff in it. I like Trader Joe's Brownie Truffle Mix, and Trader Joe's Graham Crackers.
One of these days, I'm going to make this with my favorite brownie recipe, instead of a mix. I think that will put them over the top...
...but I promise to sample them in private to save myself from any further hostessing faux pas.
S'mores Brownies
Recipe by Vicki @ Life In My Empty Nest
1 Box Brownie Mix (either for 13 x 9 or 9 x 9 pan) prepared according to directions on the box.
4-5 graham crackers
4 regular-size (1.55 oz.) milk or dark chocolate bars (like Hershey or Dove),
Approximately 3/4 Bag Mini Marshmallows
Prepare Brownies according to directions on the box.
While brownies are baking, break graham crackers into small pieces.
Chop chocolate bars into small pieces.
When brownies are done, remove from oven and immediately top with 3/4 bag mini marshmallows (less if you are using a 9 x 9 pan).
Sprinkle graham crackers on top of marshmallows. Place in broiler until marshmallows begin to melt and brown slightly. Watch carefully, so as not to burn graham crackers.
Remove from broiler and immediately sprinkle chopped chocolate on top. Cut in squares when cool.
Try leaving these for Santa instead of sugar cookies. On second thought, maybe not, because he just might not want to leave, and then it will be your fault that 76% of the world's children didn't get their Christmas presents.
Keep them for yourself.

DeleteOoooy gooooy yummy!! I make a similar recipe that my mom always made - she called them simply "marshmallow squares". I must try sprinkling the graham crackers on top next time I make them. They look so delicious Amy!! No wonder your fb friend was getting impatient for this recipe! Hope your week is a bit more relaxing! Stay calm.....that's what I keep repeating to myself!!

DeleteI love anything chocolate and that looks delicious! It reminds me of Mississippi Mud. Have you ever heard of that before? It's basically the same thing except more structured. It's brownies on the bottom, then sprinkle with mini marshmallows on top of the hot brownies. Then spread chocolate frosting over the marshmallows. Easy and delicious. Yours is probably a little sweeter with the chocolate pieces on top. Thanks for sharing this recipe.

These brownies are great and it is perfectly fine to compliment yourself, after all, I feel we are worth the compliment and let everyone know, "wow, this is good". I do it all the time. lol

We don't get graham crackers or marshmallows on the island, so will have to definitely try your recipe when in the land of marshmallows and graham crackers, and Canada is home to both!

I'm feeling so sad that you've never had s'mores, Poppy! I wish I could send you a batch but I shudder to think of what they would look like when they arrive! They're kind of a mess to begin with! I guess you'll have to wait till you go back to Canada. I can just see it now -- your luggage stuffed with graham crackers and marshmallows -- enroute from Canada to Crete!

DeleteKiller brownies dude! :) These would be great for glamping as Eileen pointed out. Eileen will make these for all of us when we make it to the Finger Lakes region and she will serve us in her pink trailer and give us wine. (not sure why we went on and on but we really do love these brownies)
