Zucchini in your cake?
I say yes to all. And if the zucchini cake also has chocolate, I'm definitely in.

After we both stopped cracking up, I decided, what the heck, I'd leave it in. I wasn't sure what I was going to write about anyway.
I mean, it's not going to win any beauty contests, or be voted "Best Looking." You would not make this to impress your future mother-in-law. It's not the kind of cake that you'd bake to for people to "ooh" and "aah" over.
But when you want something fairly healthy to snack on, or for a casual brunch, this is your cake.
Like many of my healthy recipes, this one comes from the Flat Belly Diet Cookbook. Remember when I had a friend over for brunch and I made that Tomato, Basil and Kale Frittata? I made this cake for dessert. She liked it so much, I gave her some to take home. She sent me this email:
She clearly didn't mind that it had "zookiny" in it.
When you make it, note that the "frosting" is made from melted chocolate chips (much healthier than sugary frosting). Once the chocolate sets, it will harden (I've shown photos both ways).
So, it's best to eat the cake within an hour or two after you frost it. However, you can easily microwave individual pieces for 20-30 seconds to re-melt the chocolate. I like it better that way.
Without further ado...la recipe.
CHOCOLATE ZUCCHINI SNACK CAKE
(recipe by Flat Belly Diet Cookbook)
1 3/4 cups whole wheat flour
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
2 eggs
1/2 cup sugar
1/2 cup low-fat vanilla yogurt
1/3 cup canola oil
1 teaspoon vanilla extract
1 1/2 cups shredded zucchini
3 cups semisweet chocolate chips, divided
Preheat oven to 350° F. Coat an 11' x 8" baking pan with cooking spray.
Combine the flour, baking powder, baking soda, and salt in a large bowl.
Whisk the eggs, sugar, yogurt, oil and vanilla extract in a medium bowl. Whisk in the zucchini and 1 1/2 cups of the chips. Stir into the flour mixture just until blended. Spread into the prepared pan and bake for 30 minutes or until lightly browned and a wooden toothpick inserted in the center comes out clean.
Remove from the oven and sprinkle the remaining 1 1/2 cups chips over the cake. Spread with a small spatula as they melt to form an icing, placing back into the warm oven, if needed, for about 1 minute.
Makes 12 servings (361 calories per serving).

I don't think I've ever heard of this kind of cake before. It actually does look good. I'm assuming that you don't actually taste the zucchini. I must admit I love anything with chocolate, so I would probably like this cake.
ReplyDeleteJust think of it as a twist on zucchini bread, but the texture is slightly different because of the whole wheat flour. You cannot taste the zucchini at all. With all the chocolate, that's what you really taste!

ReplyDeleteYears ago I taught in a school that served Chocolate Beatnik Cake and it actually had beets in it. No one would have ever guessed. It was delicious!
I have heard about cakes with beets in it, but never had it. I am sure I would not have a problem with that!

Anyway, yes, that's me - a temptress! I like that role. I like the healthy thing, too. Now when are they going to come up with a healthy version of ice cream???
DeleteAmy, I haven't made zookiny cake before, but I do love zucchini cake/bread. I think it makes great snack if made with no chocolate frosting (and a perfect treat when made WITH chocolate). I can tell from the pictures it is fluffy and light. I like to bake with buttermilk/yogurt, they give cakes such a light texture.

I love zucchini bread, too. This has a somewhat different texture -- a little less moist -- because of the whole wheat flour. Yes, this is a treat with the chocolate, and I force myself to stop after one piece! I agree, buttermilk and yogurt are wonderful in baked goods.

DeleteI used to make alot of zucchini bread late summer so I am quite sure this cake would be good. I think the zucchini adds to the moistness in recipes like these ...yum! :)

Thanks, Sherry! I was worried that it wasn't very "fancy" looking but, it is a good, unfussy cake. Well, except for the melted chocolate, which helps a lot!
DeleteThis looks and sounds delicious - thank you! Though to make it healthier, I would forego using the vanilla yogurt and use plain yogurt instead (no added sugar or chemicals) and add vanilla extract. And use a healthy oil such as extra virgin olive oil or coconut oil instead of canola. I'm trying to think what I could use instead of white sugar...maybe I'll experiment with a little bit of sugar but mostly raw honey.

ReplyDeleteBelieve or not, the morning after, a friend brought along two bags of Nestle Toll House chocolate chips, at 72 oz. each. She had shlepped them in her carry-on luggage all the way from DC! Friends forever. ;-)
Of course I understood, Merisi! That is too funny, about your friend shlepping the chocolate! That is a very good friend! My friend once brought back home-made baklava all the way from Greece that Aunt made. Not quite as heavy as the chips, though!
